At the end of a long day of travelling up to Llandudno, I like to walk along the promenade, peek at the pier and eat chips as I watch the sea. It was raining so I settled for a good old fish and chips cafe and watched the local life go by through the window.

The trick with fried eggs - as these - is to get the yolk covered without burning the base. The easiest way to do this is, when the white is cooked but the yolk still a bit raw, is to drop an eggcup measure of water into the frying pan and cover it immediately. The resulting steam cooks the top of the egg fast.
