I went to see this exhibition today - huge 300-year old 3D maps of various French cities, done at a 1:400 scale or so. They are absolutely amazing by their detail and quality. Every single house is represented to scale, an some of these maps have several tens of thousands of trees represented.

And of course, they are shown in the great hall of the Grand Palais, which is being used for temporary exhibitions ever since it was renovated a few years ago, and it's also a wonderful location.

Definitely worth a visit of you are in Paris.

So are these models of all the cities with Vauban fortifications?

For the most part, yes, but there's also a couple of Dutch (fortified) cities, as well as the naval bases of Brest and Cherbourg. And the models include Besançon, Grenoble, Strasbourg and Luxembourg, so let's a really interesting cities. Some of the models are form the XVIIIth century, some from the XIXth (i.e. with the railroads already included).
